Eat Me! The Veggie Potato Bowl


Trying to balance a healthy lifestyle and having a busy schedule can make eating well non-existent for me. I would have a hard time even eating enough at all, in no time it would be 5pm and I haven’t stopped to eat yet. I got obsessed with food prepping for my week and found it so helpful to keep me going for the day. In the beginning of last year I made a personal choice to greatly reduce my intake of meat and animal by products. Making my diet mainly a combination of fresh foods from the ground, it was a challenge at times, but now a year later I have reached my goal and more. 

I feel great and created some recipes to help me on my path that I would love to share with you .  Every month you will get a new tasty recipe that is easy to make for one or in large quantities for the week. They have kept me fueled and ready to face whatever I may need though the day. 

This is the first one I made and still find it to be my favorite so far!



4-5 Diced Golden Potatoes, 1 Chopped Red Bell Pepper, 2 Cups Sliced Baby Bella Mushrooms, 6oz Harriots Verts, 1 Cup Broccoli Slaw, 1 tsp Curry Powder 1Tsp Turmeric, ¾ Tbl garlic powder, ½ Tbl oregano, 2 Tbl oil, ½ cup sliced onions, ¼ tsp cayenne, 1/3 amino acids, 1tsp sesame oil, 2-3 garlic cloves minced, ¾ minced ginger, ½ table agave &½ lemon juice.


Start potatoes first, preheat oven to 425 degrees. Dice potatoes and mix in a bowl with curry, turmeric, garlic powder, oregano, oil and sliced onions. I personally love Camelina Gold oil from Ole World Oils. It has a smoking point of 475 degrees, is 35% Omega 3’s and rich in antioxidants as well having a great taste. Bake for 30-35 minutes or until crisp and golden on the outside.


Next mix cayenne, amino acids, sesame oil, garlic & ginger minced, agave and lemon juice in a small bowl. Then toss in cubed tofu and set aside.

Now take chopped veggies and cook in hot pan 4-5 minute, add seeds after 1 minute.  Then add cubed tofu and sauce in for 3 minutes or until tofu has brown edges, mixing often. Let sit for a minute then serve!  This recipe has about 4 servings and can double for more.
